Uganda unveils first national coffee flavor profiles to boost traceability, specialty market value 

New scientific flavor profiles aim to strengthen Uganda’s coffee branding and support compliance with global traceability rules.

UGANDA – Uganda has introduced its first scientifically validated Regional Coffee Flavor Profiles, a milestone officials say will strengthen the country’s global coffee identity, improve traceability, and help farmers secure better prices in the specialty market.  

The launch was presided over by Minister for Agriculture Fred Bwino at the Serena Hotel in Kampala, marking the completion of a seven-year research program that defined the distinct flavor characteristics of coffees produced across Uganda’s agroecological zones. 

Bwino said coffee remains a cornerstone of the national economy, contributing more than 22% of foreign exchange earnings and supporting millions of households. He noted that until now, the unique sensory traits of Uganda’s coffee-growing regions had not been comprehensively documented or effectively promoted on the global stage. 

The research project involved sensory experts analyzing 792 samples of both Robusta and Arabica coffees sourced from farms across the country. The samples reflected Uganda’s diverse geography, climate conditions, and soil types.  

Findings from the study established six flavor profiles for Robusta coffee and four for Arabica, forming the most detailed mapping of Uganda’s coffee attributes to date. 

For Robusta, the Kyoga Plains profile features bold and spicy notes with nutty and chocolaty aromas, while the Lake Victoria Crescent presents tropical fruit and resinous flavors with balanced sweetness.  

The Northwestern Savannah Grasslands offers dried fruit and citrus qualities, the Southwestern Farmlands provides a smooth cup with mild chocolate and full body, and the Pastoral Rangelands is notable for its resin-forward and earthy tones. The Western Savannah Grasslands showcases clean resin character with mild herbal undertones. 

For Arabica, the Highland Ranges deliver pronounced citrus brightness with cocoa aroma, the Northwestern Savannah highlights spice and berry notes with low acidity, and the Western Savannah Grasslands offers a complex mix of dried fruit, spice, berry, and citrus flavours. The Southwestern Farmlands profile features a creamy, full-bodied cup with layered spice and high acidity. 

Bwino said the profiles offer more than sensory descriptions, serving as regional identities that affirm the uniqueness and traceability of Ugandan coffee. He added that the system will enable farmers to benefit from origin-linked value and support exporters in meeting the expectations of specialty buyers. 

EUDR Compliance 

The launch aligns with Uganda’s preparations for new international traceability requirements.  

Dr. Gerald Kyalo, Commissioner for Coffee Development at the Ministry of Agriculture, confirmed the country’s readiness for the European Union Deforestation Regulation (EUDR), expected to take effect in late 2026. 

Kyalo said the government has mapped 1,000,650 farmers and their coffee gardens, capturing geo-coordinates and establishing a centralized data warehouse to maintain traceability information. Five companies have been approved as traceability service providers, with their systems piloted nationwide. 

The unveiling of the flavor profiles follows a period of strong performance for the sector. Uganda exported more than 6.13 million 60-kilogram bags in the 2023–24 coffee year, generating US$1.14 billion. Ministry officials report that total export revenues have reached US$2.2 billion as of the 2024–25 period.
