Hybrid approach combines cultivated whitefish cells with mycoprotein matrices

AUSTRIA – Revo Foods and Atlantic Fish Co have entered into a collaboration aimed at developing hybrid cultivated seafood products that use 3D structuring technology to replicate whole-cut fish formats.
The partnership brings together Atlantic Fish Co’s cultivated whitefish cells and Revo Foods’ industrial mycoprotein platform, with the stated goal of addressing technical and cost challenges that have limited commercial progress in cultivated seafood.
The companies said their joint work is centered on fillets and loins, reflecting consumption patterns in the whitefish category where most products are sold and eaten as intact cuts rather than processed or minced formats.
Atlantic Fish Co, which operates out of North Carolina, has developed proprietary whitefish cell lines and seafood-specific tissue engineering processes designed to reproduce the structure and flavor of conventional fish without using aquaculture or wild harvest.
Revo Foods, based in Vienna, offers its 3D extrusion and layering system, along with the ability to produce mycoprotein at scale, with the fungal protein serving as a structural base for integrating cultivated cells.
Mycoprotein is already used in commercial food applications and is valued for its fibrous texture, neutral taste profile, and compatibility with large-scale manufacturing, according to the companies.
The collaboration builds on Revo Foods’ existing layered seafood platform, including its EL BLANCO product line, which mimics fish texture through stacked protein structures.
Under the agreement, that platform is being modified to incorporate cultivated whitefish cells, allowing both teams to assess how the cells interact with the matrix in terms of adhesion, texture formation, sensory characteristics, and production efficiency.
Whole-cut cultivated seafood remains difficult to commercialize due to high cell requirements, complex scaffolding needs, and extended production timelines, factors that have limited output beyond pilot-scale trials.
The hybrid strategy is intended to reduce reliance on large volumes of cultivated cells by embedding them within a mycoprotein framework, which the companies say could lower production costs and improve scalability.
This approach aligns with a broader industry shift toward hybrid protein products, in which cultivated cells are combined with plant or fungal ingredients to accelerate market readiness.
Atlantic Fish Co closed a US$1.2 million seed funding round in late 2025, which the company said will support further development of its cell lines and pilot production capabilities.
Revo Foods, founded in 2021, reported that its sales doubled in the previous year and said it is targeting profitability by the fourth quarter of 2026.
Looking ahead, the partners said they are evaluating regulatory considerations, manufacturing scale-up requirements, and potential market entry strategies as part of the collaboration.
The companies added that the resulting products are intended to balance sustainability claims with manufacturing feasibility as pressure on global fish stocks intensifies.
