Angel Yeast starts specialty yeast production in China with new pilot platform 

Automated facility and real-time brewing pilot platform target premium yeast for craft beer, wine, baijiu and bioethanol markets.

CHINA – Angel Yeast has commenced trial production at its new specialty yeast plant in Baiyang Biotechnology Park, Yichang High-Tech Zone, China.  

Material feeding began on August 31, with the facility scheduled to reach full annual capacity of 8,500 metric tons once fully operational. 

The launch completes Angel Yeast’s end-to-end specialty yeast ecosystem, integrating research, pilot testing, and commercial-scale manufacturing. The expanded capability strengthens supply of high-value yeast strains for craft brewing, winemaking, distilled spirits, fuel ethanol, and biomass energy applications. 

Maintaining a ten-thousand-level microbiological standard, the plant employs strict contamination controls.  

Qin Benguo, assistant director of Specialty Yeast Production at Angel Yeast’s Yichang subsidiary, explained that filtered air creates positive pressure in feeding tanks, keeping nutrients in a highly sterile environment.  

Fully automated lines cover every stage from raw material input and fermentation to final packaging and storage, ensuring consistent quality at industrial volumes. 

Unlike traditional baker’s yeast, these specialty strains serve premium segments where fermentation performance, flavour precision, and process stability are critical. The new capacity provides brewers and bioenergy producers with reliable, high-performance ingredients to boost yields and accelerate product development. 

To suupport the factory, Angel Yeast has simultaneously commissioned its Brewing Functional Microorganism Pilot Test Platform. The advanced system replicates real brewery conditions to validate laboratory findings before full-scale rollout. 

Luo Xinjie, director of Brewing Technical Support at Angel Yeast’s Food & Fermentation Business Unit, stated that real-time monitoring tracks microbial activity and flavour compound development in a controlled, factory-like setting. This eliminates variables common in live brewery trials, such as operator differences and timing inconsistencies, while delivering precise, reproducible data. 

The platform has already proven effective in China’s baijiu sector, improving fermentation yields, stability, and flavour control. By shortening the journey from research to industrial application, it enables faster delivery of customised solutions to partners, reducing time-to-market and enhancing operational efficiency.
