Expansion targets foodservice operators serving Halal-observant consumers

USA – Maple Leaf Farms has introduced additional Halal-certified duck products for foodservice operators, expanding its portfolio with frozen duck legs and a fully cooked roast half duck designed for commercial kitchens serving Halal-compliant meals.

The new items were unveiled during Ramadan, a period when demand for Halal food products typically increases across many foodservice settings.

The company said its Halal duck legs consist of minimally processed bone-in portions that combine the leg and thigh, which are frozen and packaged in a 36-count layer-packed case intended for restaurant and institutional buyers.

According to Olivia Tucker Ruddell, marketing director at the company, duck legs have historically been one of the firm’s most frequently used items in professional kitchens because they can be prepared in a wide range of dishes.

Ruddell stated that the company expects the Halal-certified option to allow foodservice operators to serve the product to diners who require Halal preparation standards.

Alongside the new leg product, the company has also added a Halal-certified roast half duck to its lineup of items aimed at restaurants and catering operations.

Fully cooked option aimed at convenience

The Halal roast half duck product contains 12 fully cooked duck halves in each case, with individual portions weighing between 10 oz and 15 oz.

Each portion is partially deboned to simplify plating and allow operators to serve the duck either whole as a main dish or sliced and used in other menu preparations.

Ruddell said the company intends the product to offer a ready-to-use duck option that reduces preparation time while maintaining Halal certification requirements for foodservice customers.

With the addition of the two products, the company’s Halal duck portfolio now includes whole ducks, duck breasts, duck legs, and roast half duck items.

The company also indicated that it is collaborating with chefs and culinary partners to introduce the Halal duck products to more foodservice outlets.
