OFI launches deZaan single-origin cocoa liquors to support consistent premium chocolate production 

OFI introduces deZaan single-origin cocoa liquors to help manufacturers scale artisan-quality chocolate flavours consistently.

SINGAPORE – Global cocoa supplier OFI (Olam Food Ingredients) has launched a new range of single-origin cocoa liquors under its deZaan brand, aiming to help premium chocolate manufacturers achieve artisan-level flavour precision at industrial scale. 

The new range features cocoa liquors sourced from the Dominican Republic, Uganda and Papua New Guinea.  

According to the company, the products combine craft-inspired batch roasting, tailored fermentation techniques and advanced sensory mapping to deliver consistent, origin-specific flavour profiles across large-scale production. 

OFI said the approach addresses a long-standing challenge in the chocolate industry: reproducing complex, craft-quality flavours while maintaining the consistency required for industrial manufacturing. 

“The challenge for chocolate manufacturers is producing true craft-quality flavour without compromising consistency,” said Simon Brayn Smith, global head of cocoa liquor at OFI. “Our new range bridges that gap, bringing the depth and nuance of single-origin cocoa to industrial processes.” 

The launch comes as global demand for premium chocolate continues to grow, driven by consumers seeking richer, more complex flavour experiences.  

The global premium chocolate market was valued at US$32.9 billion in 2025 and is projected to reach US$40.60 billion by 2030, according to industry estimates. 

Research indicates that consumers are increasingly willing to pay more for products that offer superior ingredients, craftsmanship and distinctive flavour profiles, placing pressure on manufacturers to innovate while maintaining reliable supply and quality. 

OFI said its new deZaan liquors are designed to meet this demand by combining industrial-scale reliability with the sensory characteristics typically associated with fine-flavour chocolate. 

“By combining our origination experience, precise fermentation controls and developing specific roasting profiles, each of our new deZaan single-origin distinct cocoa liquors is redefining what’s possible for premium chocolate product makers and helping brands create opportunities for differentiation to deliver the flavour experience consumers crave,” Brayn Smith added. 

The launch also reflects OFI’s broader strategy to strengthen origin-led cocoa sourcing, leveraging its global origination network and scientific flavour mapping capabilities to identify beans with distinctive terroir characteristics. 

The cocoa liquors are intended for use across a wide range of chocolate and ingredient applications, enabling manufacturers to differentiate their offerings in an increasingly competitive premium chocolate segment.
