Noma, Novonesis unite to redefine food through biosolutions

The partnership will combine Noma’s culinary creativity with Novonesis’ scientific expertise to explore new flavors, textures, and nutritional profiles.

DENMARK – BioSolutions company, Novonesis, has joined forces with Noma, a world-renowned restaurant known for its pioneering work in fermentation and foraging, to merge gastronomy and science and redefine how the world experiences food.

The collaboration aims to connect the creativity of top chefs with the expertise of leading scientists, bringing discoveries from the laboratory and test kitchen to dining tables worldwide. 

Positioned at the crossroads of biology, science, and food innovation, the partnership seeks to scale the concept of deliciousness while encouraging both consumers and producers to rethink the possibilities of food. 

It will also explore the role of biosolutions in developing new products under the Noma Projects line.

“We need to inspire the world to eat in new ways, and I believe that flavor is the change factor for this,” said René Redzepi, Founder and Co-Owner of Noma. “Deliciousness is our superpower at Noma, and in partnership with Novonesis, we can take our imagination and knowledge to unlock incredible new flavors and bring them to people’s homes around the world.”

Both Noma and Novonesis are recognized leaders in fermentation. While Novonesis draws on more than a century of fermentation expertise applied in collaboration with global food companies, Noma has built its identity around using fermentation to craft entirely new flavor dimensions. 

“Without fermentation, Noma would be a very limited version of itself,” Redzepi added.

Beyond innovation, both organizations share a strong local focus, emphasizing origin, culture, and community. 

Noma is celebrated for rediscovering native ingredients, while Novonesis tailors biosolutions to meet local taste preferences by fine-tuning sweetness, umami, and bitterness.

The first co-developed products showcasing this collaboration will debut at Gulfood Manufacturing in Dubai, from November 4–6.
