Oterra introduces FruitMax® Purple 105 color for beverage, confectionery applications

DENMARK – Oterra, a natural color solutions provider, has introduced FruitMax® Purple 105, a clean-label purple shade formulated to deliver superior stability and vibrant appeal in both beverage and confectionery products. 

The new color solution represents a carefully balanced blend of black carrot and hibiscus concentrates, bringing together two highly recognizable and naturally derived ingredients.

According to Phil Cook, Head of Strategic Marketing at Oterra, FruitMax® Purple 105 offers exceptional performance under challenging production conditions. 

“It is flavor-neutral and has enviable stability when exposed to heat, light, and low pH environments, and its recognizable ingredients appeal to customers as well,” said Cook. 

The colorant is ideally suited for carbonated beverages, juice drinks, syrups, and concentrates, as well as gummies, jellies, hard candies, and chewy candies in confectionery applications.

Cook noted that the product performs especially well in berry-themed concepts, where its rich purple hue adds visual depth and natural appeal. 

“Black carrot can create a deep, stable purple shade, while the hibiscus is super popular with younger consumers and is well known from its use in teas and other wellness-positioned products,” he added. “This combination fits perfectly with clean-label trends, offering both familiarity and authenticity.”

FruitMax® Purple 105 is Kosher and Halal certified, suitable for vegetarians, and serves as an excellent natural alternative to grape skin-based colors. 

It has also been approved for use in EU and Codex countries, where it can be labeled as “Black carrot concentrate, Hibiscus extract” or “Black carrot concentrate, and Hibiscus concentrate,” depending on local regulations.

Oterra’s proprietary 2024 consumer insights survey revealed that purple resonates strongly with Gen Z and adventurous eaters, with nearly 80% of respondents finding purple foods appealing. 

Moreover, 92% of consumers who favored purple identified as open to trying new foods, reinforcing the color’s potential to inspire innovation in the food and beverage industry.
